Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.
The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is bottled onsite at our distillery.
Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.
Bimber’s first casks were laid down on the 26th May 2016 and we released our inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.

Santa has taken a break from his North Pole workshop to collaborate with Bimber in London, channelling his holiday cheer into a second festival bottle of our London single malt whisky.
Santa’s Edition 2024, additionally matured in a Pedro Ximenez sherry cask, unveils a luxurious
blend of ripe figs, toasted nuts, and luscious dark chocolate with a subtle whisper of
spices that warms the heart.
CASK LOTTERY: OWN A BIMBER CASK
This holiday season, enter Bimber’s Christmas Cask Lottery for a chance to own a 200L cask of our finest single malt whisky. Filled in December 2024, you will join the journey of whisky maturation. Tickets are just £10 – don’t miss this festive opportunity!
